This is one of the only options among our cheesecakes and mousses that has no chocolate in it whatsoever. Raffaello are still quite new on the scene, but the coconut and almond truffles have a soft texture with a crispy shell, ideal for breaking open and using in our cheesecake recipes. The flavour of Raffaello is hard to describe – the best words are likely ‘smooth’, ‘nutty’, and ‘rich’. Since these are words not too far from descriptors for our cheesecake filling, we were concerned when we started experimentation. Thankfully, we needn’t have been – our chefs have created a dessert that flawlessly balances all of the ingredients, leading to a well rounded and pleasing dessert.
