Our lemon meringue pie starts with the base – a crisp, wonderfully crumbly layer of shortcrust pastry in a ten centimetre pie tin. On top of that is the sharp, sweet lemon filling, as smooth and perfect as any we’ve ever tried. Finally, we get to the meringue – soft and crispy in perfect measure, our meringue is something that we’re exceptionally proud of. In this case, our meringue balances out the sharpness of the lemon filling, creating a small tart that’s got a great range of flavours in a single mouthful. We’d suggest serving this tart after a larger meal – the lemon cuts through a heavy plate!
