From the strong, crumbly, and gently crunchy pastry that sits at the base of this banoffee pie to the light whipped cream on the very top, every element of the pie contrasts and balances with every other element. The key that our test kitchen found was to get the cream layer to precisely the right thickness – not so thick as to be rich and overpowering, and not to thin as to avoid moistening the pastry. We use high quality banana and toffee in each and every one of our banoffee pies to be sure that the final result is as tasty as it could possibly be.
